Description
This Shrimp, Corn, Potatoes, and Smoked Sausage Foil Pack is a one-pan wonder full of smoky, savory, and sweet flavors, perfect for grilling, baking, or campfire cooking!
Ingredients
1 lb large shrimp, peeled and deveined
1 lb smoked sausage (Andouille or Kielbasa), sliced into rounds
2 medium potatoes, cut into small cubes
2 ears of corn, cut into thirds
3 tbsp butter, melted
2 tbsp olive oil
1 tbsp Old Bay seasoning
1 tsp garlic powder
1 tsp paprika
½ tsp salt
½ tsp black pepper
Fresh parsley (optional, for garnish)
Instructions
-
Preheat your grill to medium-high heat (375°F) or your oven to 400°F.
-
In a large bowl, combine the shrimp, sausage, potatoes, and corn.
-
Drizzle with olive oil and melted butter. Add Old Bay seasoning, garlic powder, paprika, salt, and pepper. Toss everything together until evenly coated.
-
Lay out two large pieces of heavy-duty aluminum foil. Divide the mixture into two portions and place on the foil sheets.
-
Fold the sides of the foil over the ingredients to create a sealed packet. Make sure the foil is tightly closed to keep the flavors inside.
-
Place the foil packs on the grill or in the oven and cook for 25-30 minutes, flipping halfway through, until the potatoes are tender and the shrimp are pink and cooked through.
-
Carefully open the foil packs, being cautious of hot steam.
Garnish with fresh parsley and serve immediately.
Notes
For faster cooking, parboil the potatoes for 5-10 minutes before adding them to the foil pack.
