Description
This creamy Weeknight Cream of Mushroom Chicken Skillet is a comforting one-pan meal that’s rich, savory, and ready in just 30 minutes!
Ingredients
4 boneless, skinless chicken breasts
1 tablespoon olive oil
1 tablespoon butter
8 oz fresh mushrooms, sliced
1 small yellow onion, finely diced
3 cloves garlic, minced
1 (10.5 oz) can condensed cream of mushroom soup
1/2 cup chicken broth
1/2 cup heavy cream
1 teaspoon dried thyme
1/2 teaspoon paprika
Salt and pepper, to taste
2 tablespoons fresh parsley, chopped (optional, for garnish)
Instructions

Season chicken breasts with salt, pepper, and paprika on both sides.

Heat olive oil and butter in a large skillet over medium heat.

Add chicken breasts and sear for 4–5 minutes per side, until golden brown. Remove and set aside.

In the same skillet, add the diced onion and cook for 2–3 minutes until translucent.

Stir in the sliced mushrooms and cook for another 5 minutes until softened.

Add minced garlic and cook for 1 minute until fragrant.

Pour in the chicken broth and stir, scraping up any browned bits from the bottom of the skillet.

Stir in the cream of mushroom soup and heavy cream until smooth.

Sprinkle in the dried thyme and adjust seasoning with salt and pepper.

Return the chicken breasts to the skillet, nestling them into the sauce.

Cover and simmer for 10–12 minutes, or until the chicken is cooked through and the sauce thickens.
Garnish with fresh parsley before serving. Enjoy!
Notes
For extra flavor, add a splash of white wine when deglazing the pan.
