Naturally low in calories and rich in hydration, it’s a nutritious, crowd-pleasing option for lunches, BBQs, or light dinners.


Ingredients

4 cups seedless watermelon, cubed

1 cup cucumber, diced (Persian or English cucumber preferred)

⅓ cup feta cheese, crumbled

2 tbsp fresh mint, chopped

2 tbsp fresh basil, chopped

2 tbsp lime juice (freshly squeezed)

1 tbsp honey (or maple syrup for vegan)

Salt, to taste

Freshly ground black pepper, to taste


Instructions

  1. Chop ingredients: Cube the watermelon and dice the cucumber into bite-sized pieces. Chop herbs finely.

  2. Make dressing: In a small bowl, whisk together lime juice and honey. Season lightly with salt and pepper.

  3. Combine: In a large bowl, add watermelon, cucumber, herbs, and feta.

  4. Dress and toss: Drizzle the dressing over the salad and gently toss to combine without crushing the watermelon.

 

Serve chilled: Transfer to a chilled serving bowl and garnish with extra herbs or a light sprinkle of feta if desired.
