Description
Vegetarian French Dip Sandwiches with savory mushrooms, onions, and rich au jus. A plant-based twist on the classic that’s ready in under 45 mins.
Ingredients
2 tbsp olive oil
1 large yellow onion, thinly sliced
16 oz cremini or button mushrooms, sliced
2 cloves garlic, minced
1 tbsp soy sauce
1 tsp dried thyme
Salt & black pepper, to taste
4 crusty baguette rolls, split
4 slices provolone cheese
3 cups vegetable broth
1 tbsp vegetarian Worcestershire sauce
Instructions

Heat olive oil in skillet. Cook onions until caramelized, ~10 mins.

Add mushrooms and sauté until golden. Stir in garlic, soy sauce, thyme, salt, and pepper. Cook 2 mins more.

In a separate saucepan, simmer broth and Worcestershire for 5 mins to make au jus.

Load mushroom mixture and cheese onto baguette rolls. Broil 2–3 mins until cheese melts.
Serve hot with au jus on the side for dipping.
Notes
Use vegan cheese to make this recipe fully vegan.
