Description
Cozy beef chili simmered with beans, spices, and tomatoes, served with rice.
Ingredients
2 lbs lean ground beef (85–90%)
2 tbsp olive oil
1 large onion, diced
4 garlic cloves, minced
2 bell peppers, chopped
2 cans (14 oz) diced tomatoes
1 can crushed tomatoes
2 cans kidney beans, rinsed
1 can black beans, rinsed
2 tbsp chili powder
1 tsp cumin
1 tsp smoked paprika
1 tsp cocoa powder
1 cup beef broth
3 cups cooked rice (white or brown)
Salt & pepper to taste
Instructions
Heat olive oil in a large pot. Sauté onion and garlic until fragrant.
Add ground beef. Cook until browned. Drain excess fat if needed.
Stir in bell peppers, chili powder, cumin, paprika, and cocoa powder. Toast for 1 minute.
Add diced tomatoes, crushed tomatoes, beans, and broth. Stir well.
Simmer uncovered for 30 minutes, stirring occasionally.
Serve hot over rice. Garnish with cilantro, lime, or shredded cheese.
Notes
Substitute ground turkey for a leaner option.
For vegetarian chili, replace beef with lentils or soy crumbles.
