Ingredients

For the Pot Roast:

3 tablespoons extra virgin olive oil (divided)

3 lb boneless chuck roast

1 teaspoon fine sea salt

1 teaspoon freshly ground black pepper

3 lbs yellow onions (about 8 medium), thinly sliced

2 cloves garlic, finely chopped

1 tablespoon maple syrup or brown sugar

1 tablespoon all-purpose flour (or gluten-free)

1 cup red wine (or substitute with more beef stock)

2½ cups beef stock

1 sprig fresh rosemary

1 bay leaf


Instructions

1. Sear the Roast

Preheat a Dutch oven over medium heat. Add 1 tbsp olive oil.

Season roast with half the salt and pepper.

Sear all sides until golden brown (about 10–12 minutes total). Remove and set aside.

2. Caramelize the Onions

Add remaining oil. Toss in sliced onions and the rest of the salt and pepper.

Cook over medium for 5 minutes, then reduce to medium-low and cook for 20 more minutes, stirring occasionally until golden and softened.

3. Build the Broth

Add garlic and maple syrup. Stir frequently for 7–8 minutes.

Sprinkle in flour, stir well.

Deglaze with red wine or extra beef stock, scraping browned bits from the pan.

Pour in remaining beef stock.

4. Slow Braise

Return roast to the pot. Add rosemary and bay leaf.

Cover and place in a preheated 300°F oven. Bake for 3 hours.

Flip roast, pull apart gently with forks, and cook uncovered for 30–45 minutes more until ultra-tender.

5. Rest & Serve

 

Let cool slightly before serving.

Optional: Cool completely and reheat the next day for even deeper flavor.

Serve over mashed potatoes, noodles, or creamy polenta.

Letting it rest overnight in the fridge deepens the flavor dramatically.
