These quick shredded chicken tacos are a delicious and easy weeknight dinner option. Perfect for busy evenings, they’re packed with flavor and take less than 30 minutes to prepare!
Ingredients
2 lbs rotisserie chicken (shredded)
1 tbsp olive oil
1 small onion, diced
2 cloves garlic, minced
1 packet taco seasoning (or 2 tbsp homemade taco seasoning)
1 cup chicken broth
1/2 cup salsa
10 small flour tortillas
1 cup shredded cheddar cheese
1/2 cup sour cream
1/2 cup fresh cilantro, chopped
1 lime, cut into wedges
Instructions
-
Prepare the chicken: Shred the rotisserie chicken using two forks, removing the skin and bones. Set aside.
-
Cook the aromatics: In a large skillet, heat olive oil over medium heat. Add diced onion and garlic, cooking for about 3-4 minutes until softened and fragrant.
-
Season the chicken: Add the shredded chicken to the skillet. Sprinkle in the taco seasoning and stir to coat the chicken evenly.
-
Simmer the mixture: Pour in the chicken broth and salsa, then stir everything together. Bring to a simmer and let cook for 5-7 minutes, allowing the flavors to meld and the liquid to reduce slightly.
-
Warm the tortillas: While the chicken is simmering, heat the tortillas in a dry skillet over medium heat for about 30 seconds per side until warm and slightly browned.
-
Assemble the tacos: Once the chicken is ready, spoon the mixture into the warm tortillas. Top with shredded cheddar cheese, a dollop of sour cream, fresh cilantro, and a squeeze of lime juice.
Serve and enjoy: Serve your quick shredded chicken tacos immediately with additional lime wedges on the side.
