1/2 cup all-purpose flour

1/4 cup almond flour (optional, for a gluten-free twist)

1 tsp baking powder

1/4 cup unsalted butter, cold and cubed

1/4 cup milk (dairy or plant-based)

1 egg (for the biscuit topping)

1 tbsp maple syrup or honey (optional, for extra sweetness)


Instructions

  1. Preheat oven to 375°F (190°C) and grease an 8×8-inch baking dish.
  2. Prepare the peach filling: In a large bowl, combine the sliced peaches, granulated sugar, lemon juice, vanilla extract, cinnamon, nutmeg, and salt. Stir gently to coat the peaches, then transfer them into the prepared baking dish.
  3. Make the biscuit topping: In a separate bowl, whisk together the all-purpose flour, almond flour (if using), baking powder, and salt. Add the cubed butter and use a pastry cutter or your fingers to work it into the dry ingredients until the mixture resembles coarse crumbs.
