Description

Make Instant Pot Bourbon Chicken in 35 minutes! Sweet, sticky, bold flavor with soy sauce, garlic, and bourbon. Easy and family-friendly.


Ingredients

1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces

2 tbsp olive oil

⅓ cup bourbon

½ cup low-sodium soy sauce

¼ cup ketchup

¼ cup brown sugar

2 cloves garlic, minced

1 tsp fresh ginger, grated

½ tsp crushed red pepper flakes

2 tbsp cornstarch mixed with 2 tbsp water (slurry)

2 green onions, sliced (for garnish


Instructions

  1. Set Instant Pot to sauté mode. Add olive oil and chicken; cook for 3–4 minutes until lightly browned.
  2. Stir in garlic and ginger. Sauté for 1 more minute.
  3. Add bourbon, soy sauce, ketchup, brown sugar, and red pepper flakes. Stir and deglaze the pot.
  4. Seal lid and cook on High Pressure for 8 minutes. Naturally release for 5 minutes, then quick release.
  5. Turn to sauté mode again and stir in the cornstarch slurry. Cook 1–2 minutes until sauce thickens.
  6. Serve hot over rice or cauliflower rice. Garnish with green onions.
