1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
2 tbsp olive oil
⅓ cup bourbon
½ cup low-sodium soy sauce
¼ cup ketchup
¼ cup brown sugar
2 cloves garlic, minced
1 tsp fresh ginger, grated
½ tsp crushed red pepper flakes
2 tbsp cornstarch mixed with 2 tbsp water (slurry)
2 green onions, sliced (for garnish
Instructions
- Set Instant Pot to sauté mode. Add olive oil and chicken; cook for 3–4 minutes until lightly browned.
- Stir in garlic and ginger. Sauté for 1 more minute.
- Add bourbon, soy sauce, ketchup, brown sugar, and red pepper flakes. Stir and deglaze the pot.
- Seal lid and cook on High Pressure for 8 minutes. Naturally release for 5 minutes, then quick release.
- Turn to sauté mode again and stir in the cornstarch slurry. Cook 1–2 minutes until sauce thickens.
- Serve hot over rice or cauliflower rice. Garnish with green onions.
