Description

This Hawaiian BBQ Chicken bursts with tropical flavors—sweet, smoky, and slightly tangy. Perfect for grilling season or weeknight dinners!


Ingredients

4 boneless, skinless chicken breasts

1 cup BBQ sauce (your favorite brand)

1/2 cup pineapple juice

1/2 cup crushed pineapple, drained

2 tbsp soy sauce

2 tbsp brown sugar

2 cloves garlic, minced

1 tsp ginger, grated

1 tbsp olive oil

1/2 tsp black pepper

1/2 tsp smoked paprika

Fresh cilantro, chopped (for garnish)

Pineapple slices (optional, for grilling)


Instructions

  1. Prepare the Marinade:
    In a large bowl, whisk together BBQ sauce, pineapple juice, crushed pineapple, soy sauce, brown sugar, garlic, ginger, olive oil, black pepper, and smoked paprika.

  2. Marinate the Chicken:
    Place the chicken breasts in a large zip-top bag or shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated. Marinate in the refrigerator for at least 2 hours, preferably overnight for best flavor.

  3. Preheat the Grill:
    Heat your grill to medium-high heat. Oil the grates lightly to prevent sticking.

  4. Grill the Chicken:
    Remove the chicken from the marinade, allowing the excess to drip off. Grill the chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F.

  5. Grill Pineapple (Optional):
    Place pineapple slices on the grill during the last few minutes of cooking. Grill each side for 2-3 minutes until caramelized and lightly charred.

 

Serve:
Transfer the grilled chicken to a serving platter. Garnish with chopped fresh cilantro and serve with grilled pineapple slices. Enjoy!

Notes

If you don’t have a grill, this recipe works beautifully with a grill pan or broiler.
