Light, flavorful, and beautifully layered, this Layered Grilled Zucchini & Herb Cheese Delight is a healthy take on a classic French millefeuille. Packed with nutrient-rich zucchini, heart-healthy olive oil, and calcium-rich cheese, it’s brightened with lemon and fresh herbs. This wholesome vegetarian dish is perfect as a light lunch, elegant starter, or refreshing side—offering freshness, protein, and fiber all in one beautiful bite.
Ingredients
2 medium zucchinis, sliced lengthwise (about 1/8-inch thick)
1 tbsp extra virgin olive oil
Salt and black pepper to taste
1/2 cup part-skim ricotta cheese
1/4 cup reduced-fat feta cheese, crumbled
1 tbsp fresh basil, chopped
1 tbsp fresh mint, chopped
Zest and juice of 1 lemon
1 tsp honey (optional, for sweetness)
Extra basil leaves, for garnish
Optional: 1/4 avocado, diced (for topping)
Instructions

Slice the Zucchini
Use a mandoline or a sharp knife to slice the zucchini lengthwise into thin, even strips. -
Grill the Zucchini
Preheat a grill or grill pan over medium-high heat. Brush both sides of the zucchini strips with olive oil, then season lightly with salt and pepper. Grill for 2–3 minutes per side until grill marks appear and the slices are tender but not soggy. Set aside to cool slightly. -
Make the Cheese Mixture
In a small bowl, combine ricotta, feta, chopped basil, and mint. Mix until smooth and creamy. Adjust seasoning with salt and pepper if needed. -
Make the Lemon Drizzle
In a separate bowl, whisk together lemon juice, zest, honey, and a drizzle of olive oil. Set aside. -
Assemble the Millefeuille
Layer grilled zucchini strips on a serving plate. Spread a spoonful of the cheese mixture on top, drizzle lightly with lemon dressing, and repeat. Aim for 3–5 layers.
Garnish & Serve
Top with extra basil leaves, a light drizzle of lemon dressing, and diced avocado if using. Serve immediately while fresh.
