Ingredients

2 steaks (choose lean cuts like sirloin or flank steak)

8 oz whole wheat noodles or gluten-free noodles for a healthier option

2 tbsp olive oil (for searing steak)

3 tbsp unsalted butter (or a plant-based butter substitute for a dairy-free version)

4 cloves garlic, minced

1 tbsp fresh thyme, chopped (or rosemary for a stronger flavor)

2 cups fresh spinach (or kale for added nutrition)

1 medium zucchini, sliced thinly

1 cup cherry tomatoes, halved

Salt and pepper to taste

1 tbsp lemon juice (freshly squeezed)

Optional: Red pepper flakes for a little heat


Instructions

  1. Prepare the noodles:
    Boil a large pot of water and cook the whole wheat or gluten-free noodles according to package instructions. Drain and set aside, reserving a little bit of the pasta water for later.

  2. Cook the steak:
    While the noodles cook, season both sides of your steaks with salt, pepper, and thyme. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the steaks and sear each side for about 3-4 minutes, depending on your preferred doneness. Once cooked, remove the steaks from the pan and let them rest before slicing them thinly.

  3. Make the garlic butter sauce:
    In the same skillet, lower the heat and add the remaining tablespoon of olive oil. Stir in the garlic and cook for about 1 minute, until fragrant. Add the butter and let it melt, creating a rich sauce. Toss in the zucchini, tomatoes, and spinach. Sauté for another 3-4 minutes until the vegetables soften and wilt.

  4. Combine the noodles and steak:
    Add the cooked noodles into the skillet, along with a small amount of the reserved pasta water to help the sauce coat the noodles evenly. Toss everything together until the noodles are coated in the garlic butter sauce. Add the sliced steak on top, drizzle with lemon juice, and toss again.

 

Serve and enjoy:
Garnish with extra herbs or red pepper flakes if desired. Serve immediately for a warm, comforting meal.

Notes

Substitution:
You can easily swap out the zucchini for other vegetables like bell peppers or mushrooms. For a dairy-free option, choose plant-based butter and skip the regular butter.
