Ingredients
For the Peach Filling:
6–8 fresh ripe peaches, peeled and sliced (about 6 cups)
1/2 cup granulated sugar
1 tablespoon lemon juice
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 tablespoon cornstarch (optional, for thicker filling)
For the Biscuit Topping:
1 cup all-purpose flour
1/4 cup granulated sugar
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup unsalted butter, cold and cubed
1/2 cup buttermilk
1/2 teaspoon vanilla extract
1 tablespoon coarse sugar (for topping)
1 tablespoon milk or cream (for brushing)
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish and set aside.
-
Prepare the peach filling. In a large bowl, combine sliced peaches, sugar, lemon juice, cinnamon, nutmeg, and cornstarch (if using). Toss gently to coat, then pour into the baking dish.
-
Make the biscuit topping. In a medium bowl, whisk together flour, sugar, baking powder, and salt. Cut in cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
-
Add wet ingredients. Stir in buttermilk and vanilla extract just until the dough comes together. Do not overmix.
-
Top the peaches. Drop spoonfuls of the biscuit dough evenly over the peach mixture, leaving a few small gaps for steam to escape.
-
Finish the topping. Brush the biscuit dough with milk or cream and sprinkle with coarse sugar.
-
Bake for 40–45 minutes, or until the topping is golden brown and the filling is bubbling.
Cool and serve. Let the cobbler rest for 10–15 minutes before serving. Best enjoyed warm with ice cream or whipped cream!
Notes
Don’t skip the coarse sugar on top—it adds a sweet crunch that makes the topping irresistible!
