Description

This easy smothered chicken and rice recipe is a cozy, one-pan dinner that combines tender seared chicken, creamy rice, and flavorful vegetables—all baked in a rich, savory sauce. A perfect weeknight comfort meal made with pantry staples and minimal cleanup.

Main:

4 boneless, skinless chicken breasts

1 tbsp olive oil

1 onion, chopped

1 green bell pepper, chopped

1 can (10.75 oz) cream of chicken soup

1 can (10.75 oz) cream of mushroom soup

1 can (14 oz) chicken broth

1 cup long-grain white rice (uncooked)

Salt and black pepper to taste

1 tsp garlic powder

1 tsp paprika


Instructions

  1. Preheat oven to 350°F (175°C).

  2. Season chicken breasts with salt, pepper, garlic powder, and paprika.

  3. Sear chicken in olive oil over medium-high heat, 2–3 min per side. Remove.

  4. In the same skillet, sauté onions and peppers until softened (about 5 min).

  5. In a mixing bowl, combine cream of chicken soup, cream of mushroom soup, chicken broth, and uncooked rice. Stir until blended.

  6. Assemble: Layer sautéed vegetables in a greased baking dish. Place browned chicken on top. Pour soup-rice mixture evenly over the chicken.

  7. Cover with foil and bake for 60 minutes or until the rice is tender and the chicken is cooked through.

 

Let rest 5–10 minutes before serving. Garnish with parsley if desired.
