Description
These tender and juicy baked chicken bites are a hit for family dinners, packed with flavor, and so simple to make. They’re the perfect balance of crispy on the outside and tender on the inside!
Ingredients
1 lb boneless, skinless chicken breast, cut into bite-sized pieces
1 cup breadcrumbs (preferably panko for extra crispiness)
1/2 cup grated Parmesan cheese
1 tsp garlic powder
1 tsp onion powder
1 tsp dried Italian seasoning
1/2 tsp salt
1/2 tsp black pepper
1/4 cup all-purpose flour
2 large eggs, beaten
2 tbsp olive oil (or cooking spray)
Instructions

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it with cooking spray.

In a shallow dish, combine breadcrumbs, Parmesan cheese, garlic powder, onion powder, Italian seasoning, salt, and pepper.

In a separate dish, place the flour. In another shallow dish, beat the eggs.

Dredge each chicken piece first in the flour, then dip it into the beaten eggs, and finally coat it in the breadcrumb mixture. Press down slightly to ensure the breadcrumbs stick well.

Arrange the coated chicken bites in a single layer on the prepared baking sheet. Lightly drizzle with olive oil or spray with cooking spray for extra crispiness.

Bake for 15-20 minutes, flipping halfway through, until the chicken bites are golden brown and cooked through (internal temperature should reach 165°F).
Remove from the oven and let cool for a few minutes before serving. Serve with your favorite dipping sauces.
Notes
For extra flavor, feel free to add some red pepper flakes to the breadcrumb mixture for a spicy kick.
