This easy chicken meatloaf is juicy, flavorful, and perfect for weeknight dinners. Made with simple pantry ingredients and ready in under an hour!
Ingredients
1 ½ lbs ground chicken
1 cup breadcrumbs (plain or Italian-style)
2 large eggs
½ cup grated Parmesan cheese
½ cup milk
½ cup finely chopped onion
2 cloves garlic, minced
1 tbsp ketchup (plus more for topping)
1 tbsp Worcestershire sauce
1 tsp dried oregano
1 tsp salt
½ tsp black pepper
½ tsp smoked paprika (optional)
Fresh parsley for garnish (optional)
Instructions

Preheat oven to 375°F (190°C). Lightly grease a loaf pan or line it with parchment paper for easier cleanup.

In a large mixing bowl, combine ground chicken, breadcrumbs, eggs, Parmesan cheese, milk, chopped onion, garlic, ketchup, Worcestershire sauce, oregano, salt, pepper, and paprika.

Mix gently using clean hands or a spatula until fully combined. Avoid overmixing to keep the meatloaf tender.

Transfer the mixture to the prepared loaf pan. Press it in evenly and smooth the top.

Spread a thin layer of ketchup (about 2–3 tablespoons) over the top for a tangy glaze.

Bake for 45–50 minutes, or until the internal temperature reaches 165°F (74°C) and the top is slightly caramelized.
Rest for 5–10 minutes before slicing. Garnish with chopped parsley if desired.
Notes
Add finely shredded carrots or zucchini for extra moisture and hidden veggies.
