2 medium potatoes, peeled and grated

1 cup corn kernels (fresh or frozen)

1 cup sharp cheddar cheese, grated

1 egg

1/4 cup whole wheat flour (for a healthier option)

1/4 cup breadcrumbs (whole wheat or gluten-free)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper, to taste

1 tablespoon olive oil (or cooking spray) for baking

Fresh parsley, chopped (optional for garnish)


Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly grease it with olive oil or cooking spray.
  2. Prepare the potatoes: Peel and grate the potatoes using a box grater or food processor. Place the grated potatoes in a clean kitchen towel or cheesecloth, and squeeze out as much excess moisture as possible.
  3. Mix the fritter base: In a large mixing bowl, combine the grated potatoes, corn kernels, grated cheddar cheese, egg, flour, breadcrumbs, garlic powder, onion powder, smoked paprika, salt, and pepper. Stir everything together until well combined. The mixture should be thick and able to hold its shape when formed into patties.
  4. Form the fritters: Using your hands, form the mixture into small, evenly sized patties (about 1-2 tablespoons each). Place them on the prepared baking sheet, making sure to leave some space between each fritter.
  5. Bake the fritters: Drizzle a small amount of olive oil over the tops of the fritters or spray them lightly with cooking spray. Bake in the preheated oven for 20-25 minutes, flipping halfway through, until the fritters are golden brown and crispy on both sides.
