Description
This easy Buffalo chicken salad is spicy, creamy, and perfect for lunch or a light dinner. Great on a sandwich, wrap, or bed of greens!
Ingredients
2 cups cooked chicken breast, shredded or chopped
1/4 cup Buffalo wing sauce (like Frank’s RedHot)
1/3 cup plain Greek yogurt or mayonnaise
1/4 cup celery, finely chopped
1/4 cup red onion, finely chopped
1/4 cup crumbled blue cheese or shredded cheddar (optional)
1 tbsp fresh parsley, chopped
Salt and black pepper, to taste
Romaine lettuce, sandwich bread, or wraps (for serving)
Instructions

In a large mixing bowl, combine the shredded chicken and Buffalo sauce. Stir until the chicken is fully coated.

Add the Greek yogurt or mayonnaise and mix until creamy and smooth.

Stir in the celery, red onion, and blue cheese (if using). Mix well.

Season with salt and pepper to taste. Add parsley and stir to combine.
Serve chilled over a bed of lettuce, in a sandwich, or wrapped in a tortilla.
Notes
This salad is easy to customize with ranch dressing, chopped cucumbers, or avocado.
