Ingredients

6 lbs St. Louis-style or baby back pork ribs

3 tbsp smoked paprika (or regular paprika)

3 tbsp brown sugar

1 tbsp kosher salt

1 tbsp ground black pepper

½ tsp crushed red pepper flakes

24 oz BBQ sauce (store-bought or homemade)

¼ cup apple cider vinegar (optional if BBQ sauce is very sweet)


Instructions

  1. Prep the ribs: Remove the silver membrane from the back of the ribs. Pat dry.

  2. Make dry rub: Mix paprika, brown sugar, salt, black pepper, and red pepper flakes. Rub generously on both sides of the ribs.

  3. Place in slow cooker: Stand the ribs upright with the meaty side against the wall of the cooker.

  4. Add sauce: Brush with BBQ sauce. Pour remaining sauce over the ribs. Add apple cider vinegar if needed.

  5. Slow cook: Cover and cook on LOW for 5 to 6 hours until fork-tender.

  6. Optional finish: For crispy edges, transfer to a baking sheet, brush with more sauce, and broil 3–5 minutes.

 

Serve: Slice between the bones. Serve with reserved sauce or reduced cooking liquid.

Notes

You can refrigerate the dry-rubbed ribs overnight for extra flavor.
