Description

These Healthy Savory Ham & Cheese Power Muffins are the perfect protein-packed, grab-and-go breakfast! Made with whole wheat flour, lean ham, and reduced-fat cheese, they’re loaded with flavor and nourishment. Each muffin is crispy on the outside, fluffy inside, and rich in protein to keep you energized all morning. A great make-ahead option for busy mornings or healthy school snacks.


Ingredients

3/4 cup whole wheat flour

3/4 cup oat flour (or finely ground oats)

1 tablespoon baking powder

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon salt

1/4 teaspoon black pepper

2 large eggs

1/2 cup plain Greek yogurt (unsweetened, low-fat)

1/3 cup unsweetened almond milk (or low-fat milk)

2 tablespoons olive oil

1 cup lean diced ham (nitrate-free if possible)

3/4 cup reduced-fat shredded cheddar cheese

1/4 cup chopped fresh spinach or parsley

2 tablespoons finely chopped green onions


Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease or line a 12-cup muffin tin with silicone or paper liners.

  2. In a large bowl, whisk together the whole wheat flour, oat flour, baking powder, garlic powder, onion powder, salt, and black pepper.

  3. In another bowl, beat the eggs, then stir in Greek yogurt, almond milk, and olive oil until smooth.

  4. Pour the wet ingredients into the dry and stir until just combined. Do not overmix.

  5. Gently fold in the diced ham, shredded cheese, spinach, and green onions.

  6. Divide the batter evenly into the muffin cups, filling about 3/4 of the way full.

  7. Bake for 22–25 minutes or until the tops are golden and a toothpick comes out clean.

 

Allow to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Add red bell peppers or shredded zucchini for extra veggies.
