4 boneless, skinless chicken breasts

2 tablespoons olive oil

1 tablespoon butter

1/2 cup diced chorizo (spicy or mild depending on preference)

1 small onion, finely chopped

3 cloves garlic, minced

1/2 cup heavy cream (or use coconut milk for a dairy-free option)

1/2 cup chicken broth

1 teaspoon smoked paprika

1/2 teaspoon ground cumin

Salt and pepper, to taste

Instructions

  1. Prepare the Chicken
    Heat 1 tablespoon of olive oil in a large skillet over medium heat. Season the chicken breasts with salt, pepper, and smoked paprika. Once the oil is hot, add the chicken breasts and cook for 6-7 minutes on each side, or until golden brown and cooked through. Remove from the skillet and set aside.
  2. Cook the Chorizo and Aromatics
    In the same skillet, add the remaining tablespoon of olive oil and 1 tablespoon of butter. Stir in the diced chorizo and cook for 3-4 minutes until crispy and browned. Add the chopped onion and minced garlic, cooking for an additional 2 minutes until fragrant and softened.
  3. Make the Creamy Sauce
    Add the chicken broth to the skillet, scraping up any flavorful bits from the bottom of the pan. Stir in the heavy cream (or coconut milk for dairy-free), ground cumin, and smoked paprika. Allow the sauce to simmer for 3-4 minutes, thickening slightly.
  4. Combine and Simmer
    Return the cooked chicken breasts to the skillet, nestling them into the sauce. Reduce the heat to low, and cover the skillet. Let the chicken simmer in the sauce for 5-7 minutes, allowing the flavors to meld together. Adjust seasoning with salt and pepper if needed.
  5. Garnish and Serve
