Ingredients

2 boneless, skinless chicken breasts

1 tablespoon olive oil

1 cup mushrooms, sliced

2 cups fresh spinach

2 cloves garlic, minced

1 cup heavy cream (or substitute with a lighter option like half-and-half)

1/2 cup grated Parmesan cheese

1 tablespoon butter

Salt and pepper, to taste

1/2 teaspoon dried Italian seasoning

8 oz fettuccine pasta (whole wheat or gluten-free if preferred)

1 tablespoon fresh parsley, chopped (for garnish)


Instructions

  1. Prepare the Chicken:
    Heat the olive oil in a large skillet over medium heat. Season the chicken breasts with salt, pepper, and Italian seasoning. Cook the chicken for about 5-7 minutes on each side or until fully cooked and golden brown on the outside. Remove the chicken from the skillet and let it rest for a few minutes before slicing it into thin strips.

  2. Cook the Pasta:
    While the chicken cooks, bring a pot of salted water to a boil. Add the fettuccine pasta and cook according to package instructions until al dente (about 8-10 minutes). Drain and set aside.

  3. Sauté the Mushrooms and Spinach:
    In the same skillet where you cooked the chicken, melt the butter over medium heat. Add the sliced mushrooms and sauté until softened, about 4-5 minutes. Add the minced garlic and cook for an additional 1 minute, until fragrant. Stir in the spinach and cook until wilted, about 2-3 minutes.

  4. Make the Alfredo Sauce:
    Lower the heat and pour in the heavy cream (or your preferred alternative). Stir in the Parmesan cheese, allowing it to melt and form a creamy sauce. Season with salt and pepper to taste. If the sauce gets too thick, you can add a little pasta water to reach your desired consistency.

  5. Combine Pasta and Chicken:
    Add the cooked pasta to the skillet and toss it in the creamy sauce until well coated. Top with the sliced chicken and mix everything together.

 

Serve:
Garnish the dish with fresh parsley for a pop of color and added freshness. Serve immediately and enjoy your healthy, creamy chicken alfredo!
