Ingredients
4 boneless, skinless chicken breasts
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon salt (or to taste)
½ teaspoon black pepper
1 teaspoon Italian seasoning
1 cup low-sodium chicken broth
4 oz light cream cheese (softened)
2 tablespoons plain Greek yogurt (optional, for added creaminess)
¼ cup freshly grated Parmesan cheese
Fresh parsley (for garnish)

Prep the chicken: Pat chicken breasts dry with a paper towel. Season both sides with garlic powder, onion powder, salt, pepper, and Italian seasoning.

Sear: Heat olive oil in a large skillet over medium-high heat. Add chicken and sear for 4–5 minutes on each side until golden brown. Remove and set aside.

Make the sauce: In the same skillet, pour in chicken broth. Scrape up any browned bits from the pan (they add flavor!). Reduce heat to medium-low.

Add creaminess: Stir in softened cream cheese and Parmesan. Whisk until melted and smooth. Add Greek yogurt here if using for extra creaminess.

Simmer: Return the chicken to the skillet. Cover and simmer on low for 8–10 minutes, or until chicken is fully cooked (165°F internal temperature).
Serve: Garnish with chopped parsley and serve hot. Pair with steamed veggies, quinoa, or a light salad.
