  • 2 tbsp olive oil or butter
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream or coconut milk
  • 1 tsp ground cinnamon
  • ½ tsp nutmeg
  • Salt & pepper (to taste)
  • Optional: 1 tbsp maple syrup, roasted pumpkin seeds for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic; sauté until fragrant.
  3. Add diced pumpkin, broth, and spices. Bring to a boil.
  4. Reduce heat and simmer for 20 minutes, until pumpkin softens.
  5. Blend soup with immersion blender (or carefully in batches in a countertop blender).
  6. Stir in cream (or coconut milk). Adjust seasoning.
