Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic; sauté until fragrant.
- Add diced pumpkin, broth, and spices. Bring to a boil.
- Reduce heat and simmer for 20 minutes, until pumpkin softens.
- Blend soup with immersion blender (or carefully in batches in a countertop blender).
- Stir in cream (or coconut milk). Adjust seasoning.
