Description
This Jamaican chicken noodle soup is a hearty, flavorful dish filled with tender chicken, vibrant vegetables, and a delicious broth that will warm you from the inside out.
Ingredients
2 lbs chicken thighs (bone-in, skinless)
1 tablespoon vegetable oil
1 medium onion, chopped
2 garlic cloves, minced
1 tablespoon grated ginger
1 teaspoon thyme (fresh or dried)
1 teaspoon allspice
1 scotch bonnet pepper (optional for heat)
4 cups chicken broth
2 cups water
2 medium carrots, peeled and sliced
2 medium potatoes, peeled and cubed
1/2 cup celery, chopped
1/2 cup bell pepper, chopped
1 cup frozen corn kernels
1 cup egg noodles (or your preferred pasta)
Salt and pepper, to taste
2 tablespoons lime juice
1/4 cup chopped cilantro (optional)

Heat vegetable oil in a large pot over medium-high heat. Add the chicken thighs and sear them on both sides until golden brown, about 5 minutes per side. Remove the chicken and set aside.

In the same pot, add the chopped onion, garlic, and grated ginger. Sauté for 2-3 minutes, until the onions are softened and fragrant.

Add the thyme, allspice, and scotch bonnet pepper (if using), stirring well to coat the onions and garlic with the spices.

Pour in the chicken broth and water, bringing the mixture to a boil.

Return the seared chicken thighs to the pot and reduce the heat to low. Simmer for about 30 minutes, or until the chicken is fully cooked and tender.

Remove the chicken from the pot, shred it into bite-sized pieces, and set it aside.

Add the carrots, potatoes, celery, and bell pepper to the pot. Continue to simmer for 10-15 minutes, or until the vegetables are tender.

Stir in the frozen corn and egg noodles, cooking for an additional 8-10 minutes until the noodles are cooked through.

Return the shredded chicken to the pot, and season with salt, pepper, and lime juice to taste.
Garnish with chopped cilantro, if desired. Serve hot and enjoy!
Notes
For a spicier soup, keep the scotch bonnet pepper in the broth while simmering. Remove it before serving if you prefer less heat.
