Ingredients
4 boneless, skinless chicken breasts or thighs
2 tablespoons olive oil
4 cloves garlic, minced
1 teaspoon paprika
1 teaspoon dried rosemary
1 teaspoon dried thyme
1 tablespoon lemon juice
Salt and black pepper, to taste
Fresh parsley, chopped (for garnish)
Optional Additions:
1 teaspoon red pepper flakes (for heat)
1 tablespoon honey (for sweetness)

Prep the Chicken
Pat the chicken dry with paper towels and season both sides with salt and black pepper. -
Make the Marinade
In a large bowl, whisk together olive oil, minced garlic, paprika, rosemary, thyme, and lemon juice. Add optional honey or red pepper flakes if using. -
Marinate the Chicken
Add the chicken to the bowl and coat each piece evenly in the marinade. Cover and refrigerate for at least 30 minutes, or up to overnight for best flavor. -
Sear the Chicken
Preheat a large skillet over medium-high heat. Add a splash of olive oil, then sear the chicken for 2–3 minutes per side, until golden brown. -
Roast the Chicken
Preheat your oven to 400°F. Transfer the seared chicken to a baking sheet or roasting pan. Roast for 20–25 minutes, or until the internal temperature reaches 165°F.
Rest and Serve
Let the chicken rest for 5–10 minutes before slicing. Garnish with chopped parsley and a squeeze of fresh lemon juice, if desired.
